Recipes I've Used And Enjoyed

          "Bea's Rum Cake"
          Great holiday cake and keeps a long time in fridge
          1 box yellow cake mix
          4 eggs--room temperature
          1 stick margarine
          1/2 cup oil
          1/2 cup water
          1/2 cup rum
          Small pkg Vanilla instant pudding mix
          1 cup finely chopped pecans
          Grease and flour a bundt pan
          crumble pecans into bottom of pan
          MIX pudding and cake mix in a large bowl
          add egg, margarine, oil, water & rum
          mix 2 min. and pour batter into the bundt pan
          bake at 325 degrees 50 mins
          stick a toothpick in to see that it's not too moist
          COOL in pan till almost cool and loosen edges while warm
          then make the sauce below


          Sauce for cake
          In a sauce pan, melt 1 stick of margarine or butter and add
          1 cup sugar
          stir till dissolved, remove from heat and add
          1/4 cup of rum stirring well..... WITH a toothpick, punch tiny holes into cake and pour
          sauce over the cake while in the pan....let it cool in pan
          THEN invert on to a plate....SPOON on the rest of the sauce
          it will drip down onto the plate.....(looks nice this way)
          This cake can be frozen!! DELICIOUS!!


          "Sue's Chocolate Truffle Balls"
          Easy and great!
          1/4th cup sugar
          3 tbsp flour
          1 egg yolk
          1 cup milk
          Cook over low heat till thick like custard & cool
          Melt 1 34 lbs milk chocolate
          pour melted chocloate into cooled custard and chill
          Roll into balls and roll in your favorite coating
          Can roll in "grated chocolate", "nuts", "powdered sugar" etc.



          "Hello Dolly Bars"
          Easy Favorite
          1/4 stick of butter or margarine
          1 cup graham cracker crumbs
          1 cup coconut
          1 cup chocolate chips
          1 cut nuts chopped
          1 cup sweetened condensed milk
          Melt butter in a 9" x 9" pan and add the ingredients in layers
          as listed....Bake at 350 degrees 30 min and cool before cutting



          "Helen's Pan Cookies"
          Just Plain Good
          2 cups flour
          1 cup sugar
          1 cup butter
          1 eg yolk
          1 tsp vanilla
          Mix all ingredients in order given and pat to about 1/4" thick
          in a greased cookie tin with sides
          BAKE at 350 degrees til light golden brown
          While hot...lay 7 or 8 Hershey Bars on top
          WHEN soft, spread around....CUT IMMEDIATELY
          sprinkle with your favorite finely chopped nuts



          "Great Chocolate Squares"
          Yummy!
          1 bag of Carmels (14 oz Kraft)
          1/3 c evaporated milk
          MELT carmels in milk on low heat
          1 pkg German chocolate cake mix
          3/4's Cup margarine, melted
          1/3 cup evaporated milk
          Mix this together with a mixer
          PACK: 1/2 of the cake mixture in a 9 x 13" greased pan
          BAKE this 6 mins at 350 degrees
          THEN: spread the carmel mixture from above on to the
          baked cake mixture
          Sprinkle 1 cup of chocolate chips on top of carmel mixture
          and also sprinkle on the remaining cake mixture
          bake 18 mins (do not overbake)



          "Cream Cheese Cookies"
          Little Different flavor...Good!
          1 cup margarine or butter
          3 oz cream cheese
          1 cup sugar
          2 egg yolks(can use 1 egg)
          1/2 tsp Vanilla
          2 1/2 cups flour
          Cream shortening, add softened cheese and blend well
          Beat in sugar and egg yolks and then vanilla....last flour
          Roll out on lightly floured board and cut with cookie cutters
          BAKE at 350 degrees 10-15 mins DON'T ROLL TOO THIN!


          "Orange Date Bars"
          Sweet & Nummy!
          1/2 lb chopped dates
          1 cup water
          2 tbsp flour
          1/4 cup sugar
          COOK till thick. While warm add 20 candy orange slices
          cut into small pieces and 1/2 cup chopped nuts. Set aside
          Mix batter.... 1 cup butter or margarine
          1 cut brown sugar
          2 eggs
          3 tbsp milk
          1 tsp vanilla
          2 cups flour
          1 tsp soda
          1/4 tsp salt
          SPREAD 1/2 of the batter into a 13 x 9 pan
          put the filling on the top of the batter
          then the remaing batter on top of the filling
          BAKE in a 350 degree oven about 30 mins.
