We love breakfast at our house. Unfortunately, because of our work schedules, we only really get to enjoy one together on the weekend. Sometimes, we even like to have breafast for dinner. Here are some of our favorite recipes for breakfast, but you can make them anytime!

Swedish Almond Cake

This is one of the easiest and most delicious coffee cakes I have ever made. Its also pretty to look at. Perfect for breakfast or brunch.

1/3 c. butter or margarine
2/3 c. sugar
1 egg
1/2 c. milk
1/2 tsp. almond extract
1 cup flour
1-1/2 tsp. baking powder
1/4 c. sugar
1 T. flour
1 T. milk
1/2 c. butter or margarine, cut up
1/2 c. sliced almonds

In a mixing bowl, beat 1/3 c. butter or margarine with 2/3 c. sugar with an electric mixer until fluffy. Add the egg, beating well. Beat in the 1/2 c. milk and the almond extract.

Stir the together, flour and baking powder. Add to the egg mixture beating at low speed until just combined.

Turn batter into a greased 9 inch round cake pan. Bake in a 350 degree oven for 20 minutes. (cake will not be done yet).

For topping: in a small saucepan, combine the 1/2 cup. sugar and 1 Tablespoon flour. Stir in 1 Tablespoon milk and add the remaining 1/3 c. butter or margarine. Cook until bubbly at med. heat. Stir in almonds.

Carefully spoon topping evenly over the hot cake. Return to oven and bake for 10-15 minutes until cake tests done and the topping is bubbly and golden. Let cook in pan on a wire rack. Makes 1 layer. Serves 6

Buttermilk Pancakes

Feather light!

Ingredients
1 egg
1 cup buttermilk
1 cup sour cream
1 teaspoon baking powder
1 teaspoon baking soda
1 cup flour

Mix all ingredients together gently. Let sit for 10 minutes while the batter rises. (Very important). Lightly oil a medium griddle. I use a 1/4 measuring cup. Serve with warm maple syrup or homemade jam.

Serves: 4

Oatmeal Pecan Pancakes

1cup pecan pieces
2 eggs
2 packets instant oatmeal - apple and cinnamon
1 cup milk
1 teaspoon vanilla
1/2 teaspoon cinnamon
1 cup Bisquick baking mix

Brown 1/4 cup pecan pieces in a little butter and set aside. Combine eggs, packets of instant oatmeal, milk, vanilla, and cinnamon. Let sit for 30 minutes.

Add 1 cup Bisquick and pecans. Ladle onto hot griddle, turn when edges are dry.

Makes eight 4-inch pancakes. Serve with butter and your favorite syrup.

Cinnamon Oat Pancake Mix

4 cup quick cooking oats
2 cups whole wheat flour
2 cups flour
1 cup non-fat dry milk powder
2 Tablespoons cinnamon
1-1/2 Tablespoons salt
3 Tablespoons baking powder
1/4 tsp. cream of tartar

Combine all in a large airtight container.This makes a nice gift. Make a simple gingham or calico fabric bag and place a baggie with 2-4 cups mix in bag. Tie plastic bag with twist-tie and cloth bag with raffia or ribbon Attach recipe card with instructions for making pancakes:

Pancakes

2 eggs
1/3 cup vegetable oil
2 cups pancake mix
1 cup water

In a mixing bowl, whisk eggs, Gradually whisk in oil. Alternately add mix and water. Heat a lightly greasted skilled or griddle to med-high heat. Pour a heaping spoonful of batter onto hot surface. Cook until bubble appear on top side. (about 2-3 minutes) then flip and cook 2 minutes more or until golden brown. Serve buttered, hot and with warm syrup or Cinnamon Cream Syrup.

Cinnamon Cream Syrup

5 T margarine
1 cup fresh whipping cream
3 T. brown sugar
1 tsp cinnamon
1/3 tsp vanilla or maple extract

Melt margarine in small saucpan over med. heat. Stir in remaining ingredients. Cook and stir with wire whisk constantly until sugar dissolves and mixture thickens slightly. (3-4 minutes) Serve warm. Store remainder in refrigerator. Makes 1 cup of homemade syrup. (Can give with gift packed in an 8 oz. jar)
