1-1/2 lbs tart apples
1/4 oz. stick cinnamon
1/4 oz ginger root
1/8 oz. mace
1/8 oz. whole cloves
2 cups vinegar
2 lbs. sugar (or 4 cups sugar)

Peel tomatoes and put in a kettle with sugar, vinegar and spices which are tied in a bag. Cook 3 hours or until thick, stirring often,
When thick remove spice bag and pour into clean, hot
jars, and seal.
This recipe is ready to eat right away and it keeps a long time in jars when sealed.
