Vegetarian & Vegan Cheese Empanadas

Recipe Ingredients
Filling:
9 oz. Monterey Jack cheese, cut into 1/2" cubes
3/4 cup finely chopped pepperoncini
1/2 cup chopped Spanish olives
3 hard boiled eggs, chopped

Dough:
3 cups flour
1 tsp salt
6 tbsp melted butter
1/2 cup yogurt
cald water



Recipe Directions
Mix together all the filling ingredients.
Sift the flour and salt. Add the melted butter,yogurt and enough water to make a firm dough. Knead dough on floured surface until smooth. Pinch off dough to make 6 balls. Roll each one into a 5" circle. Place about 1/2 cup of the filling in the center of each circle, wet edges, fold dough over, and crimp edge. Deep fry each pastry until golden in 2-3" oil heated to 360 (F). r bake at 375 (F) oven 15+ minutes, until golden brown.
