As the Guilde of St. George re-creates the Queen's court on progress and the Guilde of St. Michael re-creates the military protecting her, the Guilde of St. Ives is dedicated to re-creating the town and country folk of the Elizabethan era within the context of an all-out, drunken, bawdy celebration for her Majesty's visit.  There are many aspects that can be explored, from how the constabulary would have handled the wanton lawlessness to putting on plays to wrestling matches.  All of these and more can and should be part of the general revelling that we are known for.
