Before starting... be sure you have all the ingredients at home

Dear all, most recipes were translated from Italian into English. Should the translation not be clear enough, do not hesitate to write. Thank you! Roberta

KITTY LITTER CAKE RECIPE:

Ingredients:
1 package Spice cake mix
1 package white cake mix
1 package white sandwich cookies
Green food coloring
12 small Tootsie Rolls
1 package vanilla pudding mix (not instant)

Preparation:
Prepare cake mixes and bake according to directions.
Prepare pudding mix and chill until ready to assemble.
Crumble white sandwich cookies in small batches in blender (they tend to stick, so scrape often).
Set aside all but about 1/4 cup.
To the 1/4 cup cookie crumbs, add a few drops green food coloring and mix using a fork.
When cakes are cooled to room temperature, crumble into a large bowl.
Toss with half of the remaining cookie crumbs and the chilled pudding .
Gently combine: Put the mixture into a new, clean kitty litter box.
Put three unwrapped Tootsie Rolls in a microwave-safe dish and heat until soft and pliable.
Shape ends so they are no longer blunt, curving slightly.
Repeat with three more Tootsie Rolls and bury in mixture.
Sprinkle the other half of cookie crumbs over top; this is supposed to look like the chlorophyll in kitty litter.
Heat remaining Tootsie Rolls, three at a time, in a microwave until almost melted.
Scrape them on top of cake and sprinkle with cookie crumbs.
Serve with a new pooper-scooper.

GREEK RICE PUDDING (Greek recipe by World Wide Recipes)

1/2 cup (125 ml) rice, preferably short-grain
1 cinnamon stick
2 cups (500 ml) water
6 cups (1.5 L) milk
1+1/2 Tbs (7 ml) cornstarch (cornflour) mixed with
2 Tbs (30 ml) milk
1/2 cup (125 ml) sugar
Zest of 1 lemon
1 tsp (5 ml) vanilla extract
A grating of fresh nutmeg
Ground cinnamon for garnish.

Combine the rice, cinnamon stick, and water in a saucepan and bring to
a boil. Lower the heat and simmer covered for 15 minutes. Add the
milk, cornstarch mixture, and sugar to the pan. Increase the heat to
moderate and stir constantly until the mixture thickens, about 15
minutes. Add the lemon zest, vanilla, and nutmeg and stir to combine.
Spoon into individual serving bowls or glasses and refrigerate for at
least 2 hours. Dust with a little cinnamon before serving. Serves 6
to 8.

QUICHE LORRAINE (French recipe by World Wide Recipes)

Ingredients:
1 9-inch (22 cm) pastry shell
1/4 lb (124 g) sliced bacon, cut into 1 inch (2 cm) pieces
2 cups (500 ml) cream or milk
3 eggs, well beaten
Salt and freshly ground pepper to taste
A grating of fresh nutmeg
1/2 cup (125 ml) diced or shredded Gruyere or Swiss cheese

Preparation:
Prick the bottom of the pie crust thoroughly with a fork to prevent it
from bubbling up during cooking. Fry the bacon in a large skillet
over high heat until much of the fat is rendered out, but do not fry
it until it is crisp. Drain the bacon on paper towels. Combine the
cream, eggs, salt, pepper, and nutmeg in a bowl and mix well. Place
the bacon in the bottom of the pie shell, followed by the cheese.
Pour the egg mixture into the shell and bake in a preheated 375F
(190C) oven for 30 to 40 minutes, until the top is golden brown and a
toothpick inserted in the center comes out clean. Allow to cool and
serve lukewarm. Serves 6 to 8.

APPLE PIE

Ingredients and  Tools:
200grams flour
100grams butter
200grams sugar
1 kilo apples (yellow)
1 baking-powder bag
2 eggs
1 lemon
baking-pan (not too big)
mixer
oven

Preparation:
Peel the apples, cut and put them on the buttered (or covered by oven-paper) baking-pan. Sprinkle a little lemon on the apples not to have them become brownish. Mix first the eggs and sugar, then add flour, lemon rind, baking-powder and butter. Bake for nearly 50 minutes 180 Celsius degrees. With some electric ovens, 30 minutes are enough. Turn upside down and serve.

I try to translate the recipes from Italian into English and I guess that something may come out not to be too clear. Do not hesitate to ask me or send any corrections!!! I also add a conversion table:

1 gram = 0.035 ounces

1 kilo = 1000 grams = 35 ounces

180 Celsius degrees = 356 Fahrenheit

Send me your special recipes...

Ask me any suggestions regarding Italian cooking or any Italian recipe.
