Turtle Soup Use the tail or other meat to equal 2 cups. In large kettle add: Turtle meat 1 bay leaf salt & pepper 1 medium onion 1 clove garlic crushed Boil until meat separates from the bone, remove the kettle from the stove & clean the meat from the bone. Put meat back into kettle, return to burner and add: 1 cup cubed carrots 1 cup chopped celery 1 medium rutabaga cubed 1 cup diced potatoes 1/2 cup of corn 1/2 cup parsnips Simmer for about an hour and a half, salt & pepper to taste Fried Turtle To fry turtle, parboil or pressure cook until meat is tender. Roll in seasoned flour, Deep fry until golden & crisp. |
