2-3 Mangos
2-3 Papaya
3-4 Pears
1-2 Green bell pepper
1 Red bell pepper
1 Red onion
5-6 Green onions
2-3 Jalapeno chili peppers
2-3 Serrano chili peppers
2-3 Yellow chili pepper
(or any kind of chili pepper you wish to use)
Lots of cilantro 1 whole bunch
1 C Brown Sugar
Lemon juice (to keep fruit color)
Lime juice
Salt & Pepper to taste
2 Teaspoons of Fruit Fresh
(optional) preservative

Cut up fruit to small bite size chunks...sprinkle with lemon juice to keep fresh. Make sure fruit isn't to ripe, as it will ripen in bowl after made.
Cut up bell peppers and onions to small chunks...chop chili peppers in food processor, if possible, to avoid chili oils from burning hands...if no processor, be sure to use gloves to chop chilis.
put all ingredients in bowl and mix.
Pour in Lime juice
Pour brown sugar in until sweet taste.
Salt & Pepper to taste
Add cilantro
