Strawberry Shortcake
1 2/3 cup flour 1/3 cup sugar 3 tbsp baking powder 1/2 tsp salt 1/2 cup evaporated milk 1/4 cup margarine, melted 2 tsp vanilla 1 egg, slightly beaten 4 cup sliced strawberries 1/4 cup sugar Topping: 2/3 cup evaporated milk 3 tbsp powderedsugar 1 tsp vanilla Preheat oven to 350*. Grease and flour 8 or 9 inch pan. Combine flour, sugar, baking powder and salt. Add 1/2 cup evaporated milk, butter, 2 teaspoon vanilla, and egg until dry ingredients aremoistened. Spoon into pan. Bake 17-24 minutes. Mix strawberries and 1/4 cup sugar and refrigerate 30 minutes for topping. Place bowl and beaters in refrigerator to chill. Pour 2/3 cup evaporated milk into freezer container till slushy, about 50 minutes. Before serving, spoon into chilled bowl and beat with chilled beaters until fluffy. Add powdered sugar and vanilla until soft peaks form.
