Spanish Omelette

3 big potatoes
1 sm onion
1 sm bell pepper
5 eggs
Salt to taste
Oil

Peel and dice potatoes.  Wash them.  Cut onion and pepper in small portions.  In
a large bowl, mix potatoes, onion, pepper and salt.  Deep fry them until potatoes
are golden brown.  In another bowl beat eggs and mix it with the fried potatoes.
Heat about 2 tablespoons of oil in a non-stick frying pan and pour the mix of
eggs and potatoes, cook for a few minutes on low heat.  With plate, turn the omelette
and cook the other side for another few minutes until done.  Let it cool down and cut like a pizza.
