Venison Chili
4 lb venison roast, cubed 3 lb milk sausage 2 tbsp oil 4 med onions 1 garlic clove 2 green chiles 2 tbsp cumin 1/2 tsp dry mustard 1 pinch oregano 24 ounces tomato sauce 12 ounces canned whole tomatoes 1 ounce vodka, or tequila 1 beef bouillon cube 22 ounces beer Chop onions, garlic and chiles fine. Brown venison and sausage in small amount of oil. Add rest of ingredients. Simmer, covered, for 2 1/2 hours, stirring occasionally. Simmer another 30 minutes without stirring. Canned beans can be added.
