Venison Sausage

15 lb ground venison
6 lb ground pork
1/2 cup canning salt
1/3 cup pepper
1/2 tbsp cloves
1/2 tbsp allspice
1 ounce nutmeg
1/4 cup coriander
1 tsp garlic powder
1/2 cup Tender Quick
3 cup water

Mix meat and spices together.  Add water.  Can be used for patties or cased for sausages.
