Spanish Rice Recipe

1 pkg    Bacon, cut in 1 inch pieces
2TBSP    Olive Oil
1tsp     onion powder
1tsp     garlic powder
2tsp     cayenne pepper
1 med    onion chopped
1        green pepper chopped
2 14.5 oz can's tomatos
2 cups   uncooked rice
3 1/2 cups chicken broth

Heat oil and spices in frying pan.  Add bacon and fry until almost cooked.  Drain
all but 2 tsp oil from the pan.  Add the onions and peppers and fry until soft.
Boil chicken broth or use canned broth.  Add rice to the bacon and fry for 2 minutes.
Combine all ingredients into large pan and return to a boil.  Cover and simmer for 20 minutes or until done.  

*You can add additional cayenne pepper to adjust spicyness.  This is really well served by
itself as a meal, or served with tacos.
