3 large loaves of French Bread ( cut lenghtwise and middle scooped out)
1/2 stick of butter
2 pounds of crawfish {uncooked, peeled and deviened}
3 cups of chopped onions , or same amount as crawfish
1 cup of chopped green onions
3/4 cup of chopped parsley {fresh}
2 tsp fresh lemon juice
1 Tbl. dark soy sauce
3 tsp minced garlic
1 tsp salt
3 tsp Lousiana hot sauce
1 six pack of beer

Preheat oven to 350 (F)
In a large skillet, melt the butter over a medium heat. Then saute the green onions,
parsley, and onions until the onions are clear.
Add the lemon juice, soy sauce, and garlic and cook another ten minutes or so.
This is a good time to sample a beer!
Now add the Crawfish, the salt , and the hot sauce and stir well.
Reduce the heat, cover tightly, and simmer for about 30 minutes.
Pour enough Crawfish mixture into bread loaves to almost fill up.
Cover with cheese and place in oven until the cheese has melted.
Remove from oven and get a taste of pure exctacy.
This goes well with cold beer!
