Breads Yam Corn Bread

Recipe Ingredients
2 Cups sifted all-purpose flour
2 Cups Yellow corn meal
2 1/2T baking powder
2 t Salt
1/2 Cup Sugar
4 Eggs
3/4 Cup milk
1/3 Cup salad oil
2 2/3 Cups BRUCE'S whole yams
mashed



Recipe Directions

Sift flour with cornmeal, baking powder
salt and sugar and set aside
Beat eggs, milk and oil together in
a large bowel until smooth.
Add yams and beat until blended.
add flour mixture, stirring only until
flour mixture is moistened.
Spoon batter into two 9-inch pans.
Bake in 425*F oven 35 to 40 minutes
or until bread test done.
cut into squares, serve hot with
butter
