ITALIAN SMOKED CHICKEN

1 Whole Chicken 3 to 3 1/2 lb. 1 - 16(0z) Bottle Italian Dressing salt and pepper |

Clean and remove excess fat.Wash bird and dry (always wash the bird). Salt and pepper in side and out,rub in real good. Place in zip-lock bag, pour entire bottle of dressing in the bag also. Close the bag, roll and work the spices in real good. Place in refrigerator overnight. Place on smoker, breast up at 225 to 250 degs. for about 3 to 3 1/2 hours The int. temp. should be about 175 degs. Remove from smoker let it cool down and then cut up and serve. note; This may seen like a long time to cook a chicken, but I want my Bird done.
