Aim:

To enable students to identify the origin of liquid and solid waste in the food industry and outline the management strategies to minimize their generation and impact on the environment.

Content

A. LIQUID WASTE

  1. Discussion of type of material in waste water and contribution to BOD
  2. Environmental effects of unprocessed waste water
  3. Outline current methods of treatment of waste water
  4. List common analyses performed on waste water
  5. Discuss wastewater generation in food processing plants and the need for pretreatment and effluent control.

B. SOLID WASTE

  1. Discussion of type of material in solid waste
  2. Outline methods of disposing solid waste
  3. Discuss solid waste generation in food processing and identify control strategies
  4. Identify BI-product utilization
  5. Examine solid waste handling in food processing plants
  6. Consider environmental impact of solid waste and its disposal.

C. RAW WATER

  1. Identify sources of raw water available to food processing plants
  2. Examine methods of municipal raw water treatment
  3. Discuss treatment of raw water in food processing plants

D. LEGISLATION

  1. Identify regulations relating to waste and waste disposal
  2. Discuss requirements for granting licenses to discharge liquid and solid waste into the environment
