BARBECUE SAUCE RECIPES


HOOSIER STYLE BARBECUE SAUCE

1 cup ketchup

1 tbs brown sugar

1/2 tsp onion powder (or 1 small onion, diced)

1 tbs Worcestershire sauce

1 tsp mustard

1 tsp lemon juice

1/2 cup water

Mix all ingredients in bowl and brush on meat during final portion of cooking.


MIDWESTERN STYLE BARBECUE SAUCE

1/4 cup chopped onion

1 clove garlic

2 tsp butter

3/4 cup chili sauce

1 tbs brown sugar

1 tbs vinegar

1 tbs molasses

1 tbs water

1 tsp lemon juice

1 tsp prepared mustard

1/4 tsp liquid smoke

1/8 tsp ground red pepper

1/8 tsp salt

In medium saucepan, saute onion and garlic in butter until tender. Stir in chili sauce, sugar, vinegar, molasses, water, lemon juice, mustard, liquid smoke, pepper and salt. Bring to boil; re duce heat and simmer, uncovered, about 15 minutes.



WESTERN SAUCE

1 cup ketchup

1 cup brown sugar

1/2 cup lemon juice

1/2 stick of butter

1/4 cup minced onion

1 tsp hot pepper sauce

1 tsp Worcestershire sauce

Place all the ingredients in heavy saucepan and bring to a boil. Reduce heat and simmer for 30 minutes. Yield: 3 cups.


PIEDMONT SAUCE

1 1/2 cups distilled white or cider vinegar

10 tbs ketchup

salt to taste, if desired

1/2 tsp crushed hot red pepper flakes

1 tbs sugar

1/2 cup water

freshly ground pepper, to taste

Combine all ingredients in small saucepan and bring to a simmer. Cook, stirring, until the sugar dissolves. Remove from the heat and let stand until cool. Spoon a small amount of the sauce over grilled meats. Yield: 3 cups.
