Chinese Almond Cookies
1 cup shortening
1 cup sugar
1 egg
1 1/2 teaspoons almond extract
2 1/2 cups sifted flour
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon water
Blanched almonds

Cream shortening and sugar. Beat
in egg and extract. Gradually add
sifted dry ingredients, then water.
Chill 2 hours. Form into 1 inch balls.
Press to 1/4 inch thick on cookie sheets.
Place almond in center. Bake at
350 degrees for 12-15 minutes.
