Coconut Cookies
1/2 cup margerine or butter, softened
1 cup white sugar
1/4 cup brown sugar, packed
1 egg
1 1/2 teaspoon vanilla extract
2 cups all purpose flour
1 1/2 teaspoons baking powder
1/8 teaspoon salt
1 cup flaked coconut

In a mixing bowl, cream butter and sugars.
Beat in egg and vanilla. Combine the flour,
baking powder and salt; gradually add to the
creamed mixture. Stir in coconut. Shape into
two 3 1/2 inch rolls; wrap each in plastic wrap
and refrigerate for 2 hours. Unwrap and cut
into 1/8 inch slices. Place 2 inches apart on
ungreased baking sheets. Bake at 425 degrees
for 5-7 minutes or until lightly browned.
Remove to wire racks to cool. Makes 5 dozen.
