4-H One Egg Cake with Crunch Topping
1 1/4 cups cake flour
3/4 cups sugar
1/2 teaspoon salt
2 teaspoon baking powder
1/3 cup butter or shortening
1/2 cup milk
1 teaspoon vanilla
1 egg, unbeaten

Sift together dry ingredients. Cream
shortening and add dry ingredients
with milk and vanilla. Beat for one
minute. Pour into a greased 9X9 inch
pan. Bake at 350 degrees for 25
minutes.

Crunchy Topping
1/2 cup brown sugar
2 tablespoons flour
2 tablespoons butter

Mix all ingredients with fork until
crumbly. Sprinkly on hot cake and
bake for 5 minutes. Cool.
