Classic Peach Pie
5 1/2 cups peaches, peeled and sliced (2 1/4 lbs.)
2 teaspoons lemon juice
3/4-1 cup sugar
1/4 cup flour
Pinch ground mace
Dash salt
2 tablespoons butter
1 egg yolk
1/2 teaspoon water

Line a 9 inch pie plate with pastry.
Preheat oven to 400 degrees.

In a large bowl, combine peaches and
lemon juice. Toss well. In a small bowl,
combine sugar, flour, mace and salt.
Sprinkle over peaches, toss. Spoon into
pie crust and dot with butter. Top with
pastry.

In a small bowl, combine egg yolk with
water, mix well. Brush over top of pie.
Bake about 55 minutes or until juice
bubbles through slits near the center of
pie. Cool on wire rack.
