Farm Style Frittatas
6 sliced bacon, cut in 1/2 inch pieces
5 medium potatoes, peeled and cubed
1 large onion, chopped
1 small green pepper, chopped
6 eggs
2 tablespoons water
1-2 cups shredded colby cheese

Cook bacon until crisp, set aside. Heat
2 tablespoons bacon drippings in a 12"
frying pan, reserve the rest. Add cubed
potatoes, cover and cook on medium heat
until tender. Uncover and sauté' until
brown, adding more drippings as needed.
Add onions and pepper, cook until all are
browned. Beat eggs with water, 1/2 teaspoon
salt and 1/4 teaspoon pepper. Pour over
potatoes. Cook, turning once until eggs have set.
Sprinkle on cheese and let melt. Sprinkle on
bacon and serve.
