Fried Rice
1/2 lb. bacon, cut in 1/4 inch pieces
3 tablespoons bacon drippings
1/2 cup diced onion
2 cans mushrooms, drained
2 1/2 cups cooked rice
2 tablespoons soy sauce
1 egg, beaten

Fry bacon until crisp, set
aside. In bacon drippings,
fry onions until limp. Add
mushrooms, rice and soy
sauce. Fry 10 minutes over
low heat. Stir in egg and fry
until set. Stir in crumbled
bacon, heat and serve.
