Oyster Dressing
1 loaf bread - cubed
1 1/2 sticks butter
5 medium onions, chopped
1 1/2 cup celery, chopped
6 eggs, slightly beaten
1 cup chicken broth (15oz. can)
1 1/2 tablespoon seasoning (salt, pepper, sage)
2 cans oysters, drained, reserve juice

Melt butter and sauté' onions and celery
until onions are transparent. Mix with
bread. Add eggs, mix lightly. Add broth
and mix lightly. Place in a 3 quart buttered
casserole dish. Dot with butter. Bake un-
covered 1 1/2 hours at 350 degrees. Last
half hour baste with broth and oyster juice.
Watch carefully for burning.
Serves 6-8.
Can add nuts, sausage, etc.
