Pickled Beets
3 quarts cooked, peeled beets
2 cups sugar
1 1/2 teaspoons salt
3 1/2 cups vinegar
1 1/2 cup water
Whole cloves (optional)

Slice beets or leave small ones whole. Combine
all ingredients, except beets. Pack beets into
hot jars leaving 1/4 inch head space. Bring
liquid to a boil. Pour over beets leaving head
space. Seal jars. Pressure can.
