2 eggs
1/4 frozen package or lbs fresh Spinach
1/4 cup non-fat plain Yogurt
1 large clove Garlic
1 small Red Onion
1/2 tbsp Sun Dried Tomatos
1/2 tbsp Roasted Red Peppers
1/4 tsp Salt
1/4 tsp Black Pepper
1/4 tsp Cayenne Pepper
1 tsp Butter
1 tsp Olive Oil

Brown red onion in olive oil.
Add spinach stir fry it for a while.
Add sliced sundried tomato and Roasted Peppers.
Add rest of the ingredients except garlic, yogurt and eggs, butter and cayenne pepper.
Make couple holes in spinach and crack the eggs in them and cover.
While eggs are cooking to your perfection mash garlic in to yogurt and stir it.
When eggs are done place it on plate top it with garlic yogurt mix.
Melt butter and cayenne, pour over yogurt..
