hand-in-hand!! “Catfish get their
name from their distinctive Two cat-like whiskers.
The term “Hush Puppy” came about when hungry dogs, begging around the
dinner tables of Southern outdoor fish fries, were feed fried morsels of corn
batter and were told to “Hush Puppy.”
This uniquely delicious fish is coated in corn
meal an pan fried Southern style. Served
with Hush Puppies, cole slaw and potato salad or steamed rice. Southern

Steak Dinner An all-time favourite, often
called “Hamburger Steak,” harks from an end-of-the-century London physician, Dr. J.H.
Salisbury, who developed a diet regime consisting of a broiled, minced lean beef
patty three time a day……J. Wellington Wimpy, cartoon character Popeye’s
notorious hamburger eating friend would trade his burgers for this!!
Served topped with onions and green bell peppers, along with mashed

Dinner I
was well along in years before I discovered the name of this dish had and “e,”
an “r,” and a “g,” and three syllables… Fondly referred to by many as
“Wrinkled Steaks,” this dish is served with collard greens, potato salad and

Beans & Ham Hock If
you’re from the South of the U.S., you may remember that Monday was always “Bean
Day.” The reason being most
mothers did their laundry on that day and had little time to prepare a meal
requiring a lot of their time and attention. It became customary for them to put a pot of beans on the
back burner of the stove to slowly cook virtually unattended while they went
about their chore of doing the laundry. At
the end of the day you would have a meal that couldn’t be beat by the best
stake. We keep the tradition but I
don’t do laundry! This great meal
is served with potato salad, collard greens and corn bread. Texas
Caviar (Black-eyed Peas) & Ham Hock Arriving
in the U.S. in 1734, black-eyed peas became a staple of the colonial diet and
remains so throughout the Southern and Western states….We serve ours with a
large, smoke cured ham hock like none you’ve seen or tasted, and corn bread. Pig FeetA
