2 Red Onions, halved and thinly sliced lengthwise
1 Hot Pepper, seeded and finely julienned
3 Tablespoons Red Wine Vinegar
Salt
1/8 Teaspoon finely ground white pepper
1/3 Cup Olive Oil

1. Place onions and hot pepper in a bowl and set aside.
2. In another small bowl, combine the vinegar, salt and white pepper and mix well. Add the oil and whisk thoroughly
3. Add the dressing to the onions and peppers and toss. Let stand at room temperature for about 1 hour before serving.
This recipe will keep in the refrigerator for up to a week. It can be doubled or tripled easily to ensure having some on hand!
