Cakes & Pies Louisiana Sweet Potato Pie

Recipe Ingredients

2 cups yams or sweet potatoes, cooked & mashed
2/3 cup butter flavored lite margarine
2 cups dark brown sugar
4 whole eggs whipped or egg substitute
1-1/4 cups 2% milk or evaporated milk
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon baking powder
1 teaspoon pure vanilla
2+ ounces good Whiskey or Brandy, (optional)



Recipe Directions
1. Make or purchase one 10-inch piecrust or two 8-inch.

2. Now cook sweet potatoes either by baking, boiling, or steaming in Microwave. You may also use potatoes that have be frozen and thawed. Mash sweet potatoes.

3. Put brown sugar, margarine, cinnamon and allspice in microwave dish and heat until margarine melts, add to mashed potatoes and blend well; now add eggs or substitute, milk and baking powder to mashed potatoes, blended well; add vanilla and whiskey.

4. Fill one or two pie shells with sweet potato mixture and bake in a 300° F degree oven for one hour or until filling are set. Remove and put on wire rack until cool.

Tip: freezes well, you may decorate top of pie with pecans or walnuts.
