Taken to complete end fermentation, and starting with whole milk, there will be about 4 g carbs per cup left. Your best measurement batch to batch is your glucometer. Try eating one cup at the same time every day for each batch and measure your blood sugar before, 1/2 hour and maybe 1 hour later. You should require very little, if any, adjustment to your insulin.
