Keep in mind that these substitutions won't necesarily be EXACT flavor duplications, but they will taste nice in place of whatever you don't have.  Start with HALF of what the recipe calls for, unless otherwise noted here, and keep adding to your own taste.

Cinnamon OR dash Nutmeg OR dash Cloves

Fennel seed OR a few drops Anise Extract

dash bottled Hot Pepper sauce + a blend of Oregano & Cumin

Green onion OR Onion OR Leek

Parsley

Nutmeg OR Allspice (use only 1/4 of the amount)

Allspice OR Cinnamon OR Nutmeg

Chili powder

Allspice OR Cinnamon OR Mace OR Nutmeg

Blend any of the following: Basil, Oregano, Rosemary, and Ground Red Pepper

1/2 tsp. finely shredded lemon peel

Allspice OR Cinnamon OR Ginger OR Nutmeg

Basil OR Thyme OR Savory

Basil OR Marjoram OR Rosemary

Cinnamon OR Ginger OR Mace

Thyme OR Basil

Chervil OR Cilantro

Sage PLUS a blend of any of the following: Thyme, Marjoram, Savory, Black Pepper and Rosemary

Dash bottled Hot Pepper sauce OR Black Pepper

Thyme OR Tarragon OR Savory

dash Turmeric (for color)

Poultry seasoning OR Savory OR Marjoram OR Rosemary

Thyme OR Marjoram OR Sage

Chervil OR dash Fennel Seed OR dash Aniseeed

Basil OR Marjoram OR Oregano OR Savory
