1 rabbit, about 3 lbs
1/4 cup milk
Flour
3 Tbsp oil
2 medium onions, sliced
1 glove garlic, finely minced
1 Tbsp Parsley, chopped
3 Tbsp butter (or margarine)
1 1/2 cups tomato juice
1/4 tsp Worchestershire sauce
Salt & pepper to taste

Wash, drain, and cut rabbit into serving pieces. Dip in milk, and roll in the mixture of flour, salt, and pepper. Heat oil and brown lightly on all sides. Pour creole sauce (instructions follow) over the rabbit pieces, cover and bake in a 325 degree (F) oven for about 2 hours, or until tender. Uncover and bake for 30 minutes to brown.
To make creole sauce, cook the onions, garlic, and parsley in the butter until it is golden. Add other ingredients, except salt and pepper, and cook gently for 15 minutes. Season to taste with salt and pepper and proceed as directed in recipe above.
