1. Preheat oven to 250ºF.
2. Toss all ingredients in a bowl, stirring to coat tomatoes thoroughly.

Spread on a cookie sheet that has been covered with parchment paper.
4. Bake for 1 hour and then turn off oven.
5. Leave tomatoes in oven overnight.
6. Place in container and refrigerate.
These are really delicious in salad and eliminates any need for salad dressing.
You can use them for a variety of things, including bruschetta. I like to toss them with fresh Mozzarella cheese balls.
