1. Preheat oven to 350ºF.
2. Melt butter in skillet.
3. Add zucchini and chopped onion.
4.
Cook and stir over medium heat until crisp_tender.
5. Add tomato, basil, salt, & pepper.
6. Cook another
2 minutes (till tomatoes are hot).
7. Then put all ingredients into a baking dish.
8. Put mozzarella cheese
to cover top. (I actually like to use the Mexican 3 cheese combo)
9. Bake for 10 to 15 minutes.
Serves 6.
This can also be served w/o baking and/or w/o the cheese. I added the last part myself to a recipe that I found in a Pillsbury
