Meatloaf (old Quaker Oats recipe)

Ingredients:
1 1/2 lb
3/4 c
1 1/2 tsp
1/4 tsp
1 c
1
3/4 c
ground beef
extra virgin olive oil
salt
pepper
tomato juice
egg, beaten
oatmeal
Procedure:

1.  Preheat oven to 350ºF.
2.  Mix all ingredients thoroughly.
3.  Pack firmly into an ungreased loaf pan.
4.  Bake for 1 1/4 hours.
5.  Let stand for 5 minutes before slicing.

One of my favorite things to do with this recipe is to divide it into 6 to 8 parts and form them into patties. Then I cook the patties in a lidded frying pan in very little oil. The patties freeze well and can be cooked individually later. This way I can have my piece of meat loaf without having to cook a whole loaf!
