Cocoa Fudge Cakes

1 2/3 cups of all purpose four or

 2 cups of cake four

1 1/2 cups of sugar

2/3 cup cocoa

1/2 cup of shorting

1 1/2 cups of buttermilk

1 1/2 teaspoons baking soda

1 teaspoon of salt

1 teaspoon of vanilla

2 eggs

Heat oven to 350 degrees. Grease and flour rectangular pan, 13x9x2 inches, or 2 round pans, 8 or 9x1 1/2 inches, or 12 cup bundt cake pan. Beat all ingredients on low speed, scraping bowl constantly, 30 seconds. Beat on high speed, scraping bowl occasionally, 3 minutes. Pour into pan(s). Bake until toothpick inserted in center comes out clean, rectangle 35-40 min, rounds 30-35 min, bundts 40-45 minutes. Frost with cocoa frosting or any desired frosting.

 

Butterscotch Brownies

1/4 cups of shorting

1 cup brown sugar

1 teaspoon vanilla

1 egg

3/4 cups of all purpose flour

1/2 chopped nuts (optional)

1 teaspoon baking powder

1/2 teaspoon salt

Heat oven to 350 degreese. Heat shortening in 1 1/2 quart saucepan over low heat until melted; remove from heat. Stir ingredients, spread in greased square pan, 8x8x2 inches. Bake for 25 minutes. Cut into about 2 inches squares while warm.
