Brownie Bites
This
page is devoted to Elizabeth and Lucky's love for brownies.....The various
brownie recipes are from the members of the Boxcar Regiment....aka....Brownie
Troop.....Enjoy!!
Blondie
Brownies ...Pvt.KBMeow

2 cups
packed brown sugar
-
2/3 cups
butter or margarine
-
2 eggs
-
2 tsp.
vanilla
-
2 cups
all purpose flour
-
1 tsp.
baking powder
-
1/4 tsp.
baking soda
-
1 6 oz.
bag of chocolate chips (1 cup)
Grease 13x9x2 baking pan. In a medium sauce pan, heat brown sugar and butter
over medium heat until sugar dissolves, stirring constantly. Cool slightly.
Stir in eggs one at a time, and vanilla, stir in flour, baking powder and
baking soda. Spread into a pan, sprinkle chocolate chips on top and bake
25 - 30 minutes at 350. Cut while warm.

Mint Brownies

1/2 cup
room temperature margarine

2 cups
confectioners sugar

2tbps.
of creme de menthe

1 cup
chocolate chips
-
6 tbsp.
of butter
Make brownies as normal. Let the cool completely. In a bowl, mix together
the confectioners sugar, margarine and creme de menthe. Beat until smooth.
When the brownies are completely cool, spread on top of them. Then melt
the chocolate chips and butter. Spread this on top of the cream mixture.
Let cool until the top is hard. (refrigerate for best results)

all purpose flour

cocoa powder (or unsweetened)

1/2 tsp.
baking soda

1/8 tsp.
salt

3/4 cup
granulated sugar

1 large
egg
-
1 egg
white
-
1/3 cup
dark or light corn syrup
-
1/2 tsp.
vanilla extract
-
1/4 cup
semi-sweet chocolate chips
-
1/4 cup
chopped walnuts
1. Preheat oven to 350 F. Spray an 8-inch square baking pan with vegetable
cooking spray.
2. In a medium bowl, combine flour, cocoa, baking soda and salt. Mix well;
set aside.
3. In a medium bowl, combine the sugar, egg and egg white. Mix well. Whisk
in the corn syrup and vanilla until well combined.
4. Gradually stir flour mixture into the sugar mixture until smooth. Fold
in chocolate chips and walnuts. Spread batter evenly in prepared pan.
5. Bake until mixture starts to pull away from sides of pan, about 25 minutes.
Place pan on a wire rack and cool for 10 minutes. Turn out onto rack and
cool completely. Cut into squares and serve!

-For one 17 1/2 x 11" baking pan.

all-purpose flour

(1 stick) butter or margerine

1/2 cup
shorting
-
1 cup
brewed coffee ot water
-
1/4 cup
dark, unsweetened cocoa
-
1/2 cup
buttermilk
-
2 eggs
-
1 tsp
baking soda
-
1 tsp
vanilla
Frosting
-
1/2 cup
(1 stick) butter or margarine
-
2 tbsp
dark cocoa
-
1/4 cup
milk
-
3 1/2
cups unsifted powdered sugar
-
1 tsp
vannila
*Tip....if you don't have buttermilk on hand, substitue 2 tsp vinegar or
leomon juice. Mix into 1/2 cup milk. Or use powdered
buttermilk...mix
according to package directions.
Preparations:
1.
In a large bowl, combine the flour and the sugar.
2.
In a heavy saucepan, combine butter, shortening, coffee or water and cocoa.
Stir and heat to boiling.
3.
Pour boiling mixture over the flour and sugar in the bowl. Add the buttermilk,
eggs, baking soda and vanilla.
4.
Mix well, using a wooden spoon or high speed on electric mixer.
5.
Pour into a well buttered 17 1/2 - 11 inch jelly roll pan.
6.
Bake at 400 F for 20 minutes or until brownies test done in the center.
7.
While brownies bake, prepare the frosting. In a saucepan, combine the butter,
cocoa and milk. Heat to boiling, stirring.
8.
Mix in the powdered sugar and vanilla until frosting is smooth.
9.
Pour warm frosting over brownies as soon as you take them out of the oven.
Cool. Cut into squares.

48 brownies
As
you can see this is definitely NOT a low cal recipe.....maybe thats why
they take longer to make??!! Anyhoo..they're
great!!
