Easy Step-By-Step Canning Instructions

Follow a tested home canning
recipe, such as those found in the Ball Blue Book® Guide to Home Canning,
Freezing and Dehydration.
- Assemble
jars, lids, bands and canning equipment. Check all items to ensure they
are in good working condition.
- Wash jars,
lids, and bands in hot soapy water. Rinse well. Dry bands; set aside.
Heat jars and lids in a saucepan of hot water (180°F), keeping them hot
until used. Do not boil lids. (For recipes requiring less than 10
minutes processing, sterilize jars by boiling 10 minutes.)
- Process
soft spreads, fruits, tomatoes (with added acid) and pickles in a
boiling-water canner. Process vegetables, meat, poultry, seafood, and
combination recipes (with acid and low-acid ingredients) in a
stream-pressure canner.
- Fill hot
jars, leaving recommended headspace ¼-inch for soft spreads and pickles,
½-inch for fruit and tomatoes; 1-inch for vegetables, meat, poultry, and
seafood.
- Remove air
bubbles with nonmetallic spatula.
- Wipe rim
and threads of jar with a clean damp cloth. Center heated lid on jar
with sealing compound next to jar top. Screw band down evenly and firmly
until a point of resistance is met—fingertip tight.
- Place jar
in canner. Fill remaining jars. Process filled jars following the method
and processing time indicated in the tested recipe.
- When
processing is complete, remove jar from canner. Set jars upright on a
towel to cool. Bands should not be retightened. Let jars cool 12 to 24
hours.
- After jars
are cool, test for a seal by pressing the center of the lid. If the lid
does not flex up and down, it is sealed. Remove bands. Wipe jars and
lids with a clean damp cloth. Label and store jars in a cool, dry, dark
place.
- Bands may
be reused. Lids are for one-time use only.
