P B C Oatmeal Cookies

 

Ingredients:

¾-cup of butter (I used Smart Balance Omega-3 50/50)

½-cup peanut butter

½-cup organic evaporated sugar cane juice

1-cup packed organic brown sugar (I find that just using brown sugar in cookies is the best, but you can use at your own discretion)

1-teaspoon baking powder

½-teaspoon baking soda

2 free range eggs

1-teaspoon natural vanilla extract (not imitation)

1 ¼-cups all purpose unbleached flour

2 cups rolled oats

1 cup each of chopped walnuts and organic semi sweet chocolate chips (M & M’s are good too. The Mars Co., make that good DOVE® chocolate. It is the best chocolate.)

Directions:

In a large mixing bowl beat butter and peanut butter with an electric mixer on medium speed about 30 seconds or till combined. Add sugar, brown sugar, baking powder, and baking soda. Beat till combined, scraping the sides of bowl occasionally. Beat in the eggs and the vanilla till combined. Beat in as much of the flour as you can with the mixer. Stir in remaining flour. Stir in rolled oats and walnuts and chocolate chips.

 

Drop dough by rounded teaspoons 2 inches apart on an ungreased cookie sheet. Bake in a 375°F oven about 10 minutes or till edges are lightly browned. Transfer cookies to wire rack and let cool. Makes about 45 to 50 cookies.
