Frozen Chocolate Pie

 

 

1 stick or ˝ packet of our piecrust mix

1-cup confectioners’ sugar

˝ cup soft butter

6 squares of 1 oz. semisweet chocolate, melted and cooled*

1-teaspoon vanilla

4 eggs

1 cup chilled whipping cream

2 tablespoons confectioners’ sugar

 

Prepare 9-inch baked pie shell as directed on package. In small mixer bowl, blend 1 cup confectioners’ sugar and the butter on low speed until fluffy. Blend in chocolate and vanilla. On high speed, beat in eggs, one at a time, beating thoroughly after each addition.

 

Pour into baked pie shell; cover with plastic wrap. Freeze several hours or until firm.  For easier cutting, remove from freezer 15 minutes before serving; remove plastic wrap.

 

In chilled bowl, beat cream and 2 tablespoons confectioners’ sugar until stiff; pile onto pie. If you wish, garnish with chocolate curls. 8 servings.

 

*1 package 6 oz. semisweet chocolate pieces can be substituted for the chocolate squares.

 

This is one of the best of any chocolate pie because it’s so rich.
