Baked Apples

4 Macintosh or Granny Smith or Fuji Apples 2 tsp. lemon juice 6 tsp. golden raisins 4 tsp. brown sugar 2 tsp. ground cinnamon 1 tsp. Vanilla extract 1 tsp. Rum Extract or 1 Tbsp. Dark Rum ½ cup apple juice Light Vanilla ice cream or soy ice cream |

Preheat oven to 350°F. Core each apple but do not cut
through, so that the bottom remains intact. Remove ½ inch of the peel at the
top of the apple. Place apples in a baking dish ans sprinkle with the lemon
juice. Fill centers with raisins and brown sugar. Drizzle with vanilla
extract ans sprinkle with cinnamon. Pour rum extract and apple juice into
bottom of the dish. Bake for 30-35 minutes, basting several times during
cooking. Let stand 3 minutes, then top with light vanilla ice cream or soy
ice cream. |
