From the “Passover Haggadah”

 

Part of the Passover Seder meal. The traditional Seder plate includes a hard-boiled egg, parsley, and a roasted shank bone of lamb. The meal also includes matzo bread and bitter herbs, which can be horseradish, romaine lettuce, potato or celery. The following recipe is for Haroseth or Charoses, which resembles the mortar used to make bricks by the Jewish children during their time of captivity in Egypt before the Exodus.

 

3 cups chopped apples

¾ cup walnuts or almonds, chopped

¾ cup sweet red wine or grape juice

½ teaspoon cinnamon

½ cup dates, chopped

½ cup raisins

 

Combine all ingredients in large bowl. Serve immediately or chill for several hours.

Serves 6.

 

Ancient foods of the bible include barley, bulgur wheat, milk, honey, whole grains, beans, vegetables, figs, grapes, yogurt, simple cheeses, poultry, fish, on special occasions red meat, fruits and nuts, foods were sweetened with juice or honey, kosher sauces were made with butter or cream. Sugar wasn’t heard of.
