This classic southern recipe
is an all time favorite at home.
They’re great with pinto
or cranberry beans and cole slaw.

Squash Puppies |

5 medium yellow squash |
|
1 egg, beaten |
|
½ cup buttermilk |
|
1 onion, chopped |
|
¾ cup self-rising cornmeal |
|
¼ cup all-purpose flour |
|
|
|
Slice squash and cook until tender. Drain squash and mash. Combine squash and remaining ingredients. Drop mixture by tablespoon into hot oil. Fry 5 minutes or until golden brown. Makes about 2 ½ dozen puppies. For an extra touch: A dash or two of Tabasco adds a nice zip to the recipe. |
