This classic southern recipe is an all time favorite at home.

They’re great with pinto or cranberry beans and cole slaw.

 

 

Squash Puppies

 

 

5 medium yellow squash

1 egg, beaten

½ cup buttermilk

1 onion, chopped

¾ cup self-rising cornmeal

¼ cup all-purpose flour

 

 

Slice squash and cook until tender. Drain squash and mash. Combine squash and remaining ingredients. Drop mixture by tablespoon into hot oil. Fry 5 minutes or until golden brown. Makes about 2 ½ dozen puppies.

For an extra touch: A dash or two of Tabasco adds a nice zip to the recipe.
