CHRISTMAS RICH BLACK FRUIT CAKE
1 lb flour
1 lb sugar
4 oz almonds
4 tsp baking powder
11/2 tsp mixed essence
1 tsp vanilla essence
2 tsp ground cinnamon
6 cups rum
3/4 cup browning
1 doz eggs
1 lb butter
1 lb currants
1 lb raisins
1/2 lb cherries
4 oz peels
3/4 lbs prunes

Mince fruits days before baking. Mix together and soak for 2 days or more
Cream butter and sugar. Beat eggs until stiff then add to creamed mixture. Mix together properly using a wooden spoon. Add flour with baking powder add soaked fruits. Mix thoroughly. At this stage you may add some more browning. Turn into a well greased and floured baking tin and bake at 250 deg for one and a half hour. After 1 hour cakes may be interchanged on shelves of ovens for even baking
