Cakes & Pies Chocolate Velvet Cheesecake

Recipe Ingredients
Crust:
1 cup vanilla wafer crumbs
1/2 cup chopped pecans
3 Tbsp granulated sugar
1/4 cup (1/2 stick) margarine, melted

Filling:
2 pkgs. (8 oz) cream cheese, softened
1/2 cup packed brown sugar
2 eggs
1 pkg semi-sweet chocolate chips, melted
3 Tbsp almond flavor liqueur

Topping:
2 cups sour cream
2 Tbsp granulated sugar



Recipe Directions
Crust:
Heat oven to 325 F
Mix crumbs, pecans, granulated sugar and margarine; press onto bottom of 9 springform pan. Bake 10 minutes.

Filling:
Beat cream cheese and brown sugar at med. speed with electric mixer until well blended. Add eggs 1 at a time mixing well after each additon. Blend in chocolate and liqueur; pour over crust.
Bake 35 minutes. Increase oven temp. to 425 F.
Topping:
Mix sour cream and granulated sugar; carefully spread over cheesecake. Bake 10 minutes. Loosen cake from rim of pan; cool before removing rim of pan. Refrigerate. Garnish with chocolate leaves, if desired. (see below)

To make chocolate leaves: (these are fun)
Wash and dry lemon, or rose or any leaf that is not toxic. Brush the BACK SIDE of the leaves with melted semi-sweet chocolate chips. Be sure to brush a nice thick layer; refrigerate.
Carefully peel back leaves from chocolate. Arrange on your cheesecake.
