This delightful sweet relish is a must in your pantry.
10 cups ground zuccini
4 cups ground onions
2 red bell peppers
2 green bell peppers
5 Tbsp salt
2 1/4 cups vinegar
6 cups sugar
1 tsp. ea. Nutmeg, dry mustard, tumeric & corn starch
2 tsp. ea. Celery seed and black pepper

First day
Grind zuccini, onion and peppers.
squeeze by handfuls to discard some of the moister.
Add the 5 Tbsp salt and mix well.
Let stand in refrigerator over night.
Next Day
Add rest of the ingredients and cook on medium heat 30 minutes. Put in pint jars and process 25 minutes, hard boil water bath.
