* Exported from MasterCook * Tex-Mex Tuna Casserole Recipe By :Winifred Morice & Richard Simmons Serving Size : 8 Preparation Time :0:00 Categories : Casserole Low-Cal Main Dish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups tuna in water, canned 2 cups cottage cheese, 2% fat 3/4 cup sour cream 1/4 cup red onions -- diced 1/4 cup canned chili peppers 2 tablespoons salsa 3 cups cooked noodles -- drained 12 small Saltine crackers -- crumbled 12 dry-roasted cashews -- unsalted, chopped 1 spray non-stick cooking spray 1. Preheat oven to 350ºF. 2. In a large bowl, combine tuna, cottage cheese, sour cream, red onion, chilies, salsa, and noodles. 3. Pour this mixture into a 2-quart casserole dish that was sprayed with non-stick cooking spray. 4. Combine crackers and nuts and sprinkle over the top of casserole. 5.
