Spray a square baking dish lightly with cooking spray. Layer bread on the bottom of the baking dish. Sprinkle half the shredded cheese over the bread. Spray a nonstick skillet with the nonstick spray. Add mushrooms, onions, bell pepper, and sausage. Sauté vegetables until they begin to get tender and sausages are thoroughly cooked. Spread the vegetable/sausage mixture evenly in baking dish. Sprinkle the other half of the cheese over the vegetable layer. pour Egg Beaters over contents of the baking dish. Place in oven and bake for approximately 40 minutes. Remove from oven, cut into 8 equal servings, and serve hot. Optional garnish with cherry tomatoes and parsley.
