* Exported from MasterCook * Chicken Piccata Recipe By :Richard Simmons Serving Size : 4 Preparation Time :0:00 Categories : Main Dish Poultry Richsimmons&Friends Newsletter Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons flour 1/2 teaspoon salt and pepper -- each 12 ounces chicken breast -- chicken tenders non-stick cooking spray 1 cup reduced sodium chicken broth 2 tablespoons scallions -- sliced 1 teaspoon grated lemon peel 1 tablespoon lemon juice 1/2 teaspoon cornstarch 2 tablespoons chopped parsley 1 teaspoon butter -- or margarine 1. On a sheet of waxed paper, mix the flour, salt and pepper. 2. Coat the chicken tenders with this mixture. 3. Heat a large non-stick skillet over medium heat, then coat the skillet with the cooking spray. 4. Add the chicken tenders, cooking for 4-6 minutes, turning once, until cooked through. Remove them to a serving plate. 5. Add 3/4 cup of the broth, the scallions, lemon peel, and juice to the skillet, and cook for 2 minutes. 6. In a small cup, thoroughly mix the cornstarch with the remaining broth, then stir into the skillet. 7. Bring the mixture to a boil, then remove from the heat. 8. Stir in the parsley and butter. 9. Just before serving, spoon the mixture over the chicken.
